Comfort and Durability!

Meiji collection knife has wide blade, even a slicing knife. It is outstanding for large size food cutting and slicing for meat, vegetables and fruits. I liked this 9" slicing knife wide blade, because it is less effort for me to go in and out cutting and slicing when prepping food and when serving a sumptuous dinner roast meat. Meiji knife potent core of FC61 fine carbide stainless steel is protected by 100 layers of nickel and stainless steel. Blades offer remarkable durability, sharpness, and cutting performance. The ergonomic charcoal Pakkawood handles is more comfortable for left handed cook. Damascus pattern on the knife blade provides added durability, helps prevent food from sticking.

Nice sharp slicer knife

This is a really unique slicer knife. The handle shape really fits perfectly in the palm of my hand, a shape that I’ve never seen in another knife collection outside of the Meiji. With it having 100 layers of FC61 stainless steel, this knife slices so smoothly and beautifully. It looks great and is a solid Japanese knife.

Any way you slice it

What a knife. The length of the blade, the substanstial handle. Great comfort. The steel has a one of a kind damascus detail. It is super sharp and has remained sharp. Another great line from Bob Kramer!

Striking Slicer

This striking 101 layer Damascus patterned thin blade with acute edge angle allows clean slices in a single stroke. The D-shaped Pakkawood handle has a more pronounced ridge allow for a better grip and controlled carving.

Beauty and Brawn

The Meiji line is as tough as it is beautiful. Made of 101 layers of steel, and ice hardened in the process, this tough knife will work hundreds of menus before it needs to be sharpened. It also makes it possible to sharpen this knife to an optimal slicing angle so it glides right through cooked meats and raw fish. The bright stainless, patterned blade signifies its Damascus-style layering. The handle is a little longer than traditional handles. Great for larger hands or folks who don't use a pinch grip.

Amazing Kramer Design

This knife has a unique handle construction, enlarged slightly which gives the ridge more of a pronounced peak for better grip. Bob Kramer makes the signature handle pin at his shop in Washington, it represents peace and culture, and ships them to Japan. Such an amazing personal connnection. The blade is thin and razor sharp, perfect for thin slices of turkey or roast. It's made from FC61 which is extremely chip resistant and wrapped in 100 layers that makes it stunningly beautiful.

The Meiji line of Bob Kramer knives is an asian inspired look on a western knife. The edge angle and the steel are in keeping with a typical western style Kramer production knife. The detailed and asian inspired handle with angles and smoothed corners gives the feel of a traditional eastern D shaped handle. An unexpected and stunning look to this collection.

Bob Kramer work of art

An amazing knife created by Bob Kramer. The damascus steel is beautiful and is unique to each knife. The edge is super sharp. The knife itself has a wider blade and a larger handle than a typical chef knife but yet it's still extremely comfortable in your hand. Too gorgeous to use? But then when you pick it up you can't put it down.
