power tool

Combination of western blade and eastern design. Typical Kramer design with a wider body and handle. Extremely sharp and durable steel. Absolutely beautiful damascus pattern. I use this knife for chopping and slicing fruits and vegetables. Excellent feel.

Wide Blade Chef, A Powerful Knife!

Meiji collection knife has wide blade, outstanding for large size food, meat, vegetables and fruits. I liked this 6" knife wide blade my daily prep knife, because it is less effort for me to go in and out cutting and slicing food. Its potent core of FC61 fine carbide stainless steel is protected by 100 layers of nickel and stainless steel. Blades offer remarkable durability, sharpness, and cutting performance. The ergonomic charcoal Pakkawood handles is more comfortable for left handed cook. Damascus pattern on the knife provides added durability, helps prevent food from sticking.

Great chopper

This 6-inch chef's knife, with the wider blade, is reminiscent of a Japanese butchery knife. It is fluid and responsive. I like it for boning fish with a tougher skin and bigger bones. Great for chopping vegs and cubing meat. The beefier handle feels good in my hand. The Meiji line is as tough as it is beautiful. Made of 101 layers of steel, and ice hardened in the process, this knife will work hundreds of menus before it needs to be sharpened. The patterned blade is signals the Damascus-style layering. The bright stainless is eye catching. The handle is a little longer than traditional handles. Great for larger hands or folks who don't use a pinch grip.

The Meiji line of Bob Kramer knives is an asian inspired look on a western knife. The edge angle and the steel are in keeping with a typical western style Kramer production knife. The detailed and asian inspired handle with angles and smoothed corners gives the feel of a traditional eastern D shaped handle. An unexpected and stunning look to this collection.

Beautiful. Sharp.

(This review was collected as part of a promotion.) I love this knife. It's gorgeous, very sharp out of the box, the handle is comfortable and perfectly finished and sanded. I like shorter length knives with taller bellies and this fits the bill. my only concern is like many others have said the blade is not straight. i could notice it just holding it the first time and after several techniques to assess straightness I confirmed it is off by a few degrees. That would definitely a huge bummer and I considered sending it back but will give myself a bit to see if it makes any actual difference when cooking
