This Pan Solved my Tarte Tatin Problem

I've always had difficulty producing a perfect Tarte Tatin using my ancient cast iron skillet and various 'foolproof' recipes sourced from professional kitchens. This Le Creuset Tarte Tatin pan has solved those problems and I'm delighted. First, I tried the recipe in the booklet which came with the pan. It differs slightly from the traditional recipes, but it turned out a flawless tart. The caramelized apples didn't stick to the pan and the handle design really helped flipping it onto the plate. The tart was gorgeous and tasty, easily the best I've ever made. I felt satisfied and vindicated. Next, I want to try to adapt Julia's recipe to this pan. Also anxious to try the savory recipes in the booklet. As for the pan itself (mine is in Cerise), it is typical of Le Creuset's design and build quality in every regard. I'm very glad I added this pan to my Le Creuset collection and look forward to the many sweet and savory recipes I'll prepare in it. Highly recommended.

Different from other specialty cookware

This enameled cast iron dish is beautiful and helps to create a lovely Tart Tatin. So far, I've tried two recipes for it's namesake and both turned out of the dish perfectly, (and tasted wonderful!). The handles are nicely designed to facilitate turning the the cake onto a serving dish - but I like them for serving as well. They are solid and easy to grasp - though there isn't a lot of room for pot holders. One thing to be aware of when ordering: the image makes it look deeper than it is. It is 2" deep, as stated in the description. This piece is perfect for crisp-type fruit dishes, where it doubles as a serving dish, but I can see it being useful for any dish that requires a shallow profile. Clean up, like all Le Creuset cookware, is a snap - just a little soak for the cooked-on bits and the rest wipes off easily. This dish is listed as being dishwasher safe but it's not a necessary step. I enjoy having this dish - it's definitely a specialty piece. I don't use it every day - but when I do, I definitely feel spoiled.
