A sharp bread knife
This is a great Japanese bread knife. I really like the feel of the handle on this blade, it’s very comfortable and contours nicely. The blade has a nice lighter weight to it, but is very sharp. This is a great knife collection if you want to go from Western style knives to Asian. With the Evolution, it brings the two styles together with the German proprietary ice hardening technique of the FC61 steel, making it a much more durable and sharp Japanese bread knife. This is a really great knife, perfect for slicing large pieces of bread, meat and fruit with ease and minimal slices, while preventing tearing from the slices.

Quintessential Western Knife in Japanese Style
This very Western bread knife is made by Japanese craftsmen. The Evolution line is a style of knife that inspires loyalty and lifelong love. It is a hybrid of Japanese and German knife making traditions. The handle is a perfect example. It is a little heavier like a German knife, but a little narrower like a Japanese knife. The steel that the blade is made of is German and the craftsmanship is Japanese. The combination is a hard durable blade that stays sharp for a long time. Because it is serrated, maintenance is minimal. Dishwasher safe, but hand wash to retain the beauty and look of new.

Amazing Bread Knife
It's a cross between Japanese and German: three rivet, curved handle is perfectly comfortable and my personal perference. The blade is all Japanese with it's amazingly sharp, serrated blade. But what makes it so amazing is how durable it is; it's made from a new type of steel, FC61, which is extremely durable and chip resistant. Slices through any hard loaf of bread with greatest of ease.

Miyabi Evolution is a Japanese looking handle that will actually fit comfortably in the right or left hand. Unlike a true D shaped handle, it will not roll for lefties. Although a bread knife is not typically Japanese, it fits nicely with the set.

great quality bread knife
This is a great bread knife. The Japanese blade goes through a double hardening process making a blade that is thin, durable and sharp. The blade goes through an extensive traditional process right down to the Katana style watermarking along the blade edge. The blade is very sharp and cuts right through bread, melon, citrus, tomatoes and anything else with a tougher exterior and softer inside. The Western style handle is very comfortable to hold and gives me a familiar grip.
