Feeling like a Pro
i've been eyeing miyabi's for a while...and it was on sale! this is my first grown-up upgraded super knife. i'm still getting used to using the rocking style, but so far, it's sturdy and sharp. 7" is perfect for my small hands. i did feel the mid section getting less sharp since i tend to use one area most. so i had to embrace the habit to hone it regularly to keep that sharp edge. i hear chefs hone it before they use the knife every time...guess i have to learn!
Makes chopping a breeze
I had to get used to the camber in the blade at first but now I use it religiously for chopping! Is a great deal for a Miyabi
Best Knife I've ever owned
This is the sharpest knife I have ever owned and I don't have cheap knives. The high hardness, Rc61 will help it stay that way. Good balance, and very attractive so it became an instant favorite for both my wife and I.

Nice addition to the Kaizen family.
I love the aesthetics of this knife. Very beautiful. The balance of the knife tends to favor the handle which I’ve found makes it a little easier to chop/mince with. The best feature that I enjoy about this knife is the upward-slanted choil. It is very comfortable with a super smooth finish and does not irritate my index finger after prolonged use. HRc 60 so the blade stays sharp for a long time. CAUTION: I purchased this knife new from an authorized retailer. I returned the first knife due to imperfections in the VG10 core. After receiving the replacement, there were still divots/imperfections within the katana-finished edge. Not sure if it was coincidence or a blight synonymous with this particular knife. I also own the Kaizen 9 1/2” Gyutoh and the Kaizen 3 1/2” Shotoh and the blades on both knives are flawless.

Japanese beauty
The layered damascus is beautiful. No 2 blades are the same. The rounded handle feels like wood but washes and wears like plastic. The rocking blade is sharp and comfortable whether you are rocking like a chef knife or chopping as if with a santoku.

Rock or Chop
This blade profile allows you to easily revert between rocking, as with a chef knife, or chopping, as with a santoku. Tip of blade permits you to pierce vegetables or fruits for ease of cutting. Exceptionally sharp with a moisture resistant grip.

Favorite knife
This is probably my favorite knife that I own. I love the Kaizen collection, I love the aesthetic of these Japanese knives and how beautiful the 64 layers of VG10 steel is on the blade. Even though the layers are pronounced in that beautiful flower Damascus design, it’s also more subtitle in comparison to some other Miyabi blades. I love this rocking santoku, it is the perfect all purpose knife. Don’t have a chef knife, no worries you can use this knife. Need to mince herbs and garlic? This knife is a workhorse in your kitchen for all sorts of tasks, mincing, slicing, chopping. The handle feels great in hand, contours nicely and the transition from handle to blade is comfortable. I love how durable this knife is, and that I can enjoy this very sharp Japanese knife for years to come.
