Redesigned Kaizen II is a hit!

If you liked the sharpness of the original Kaizen, but found the handle a little foreign, then it might be time to reconsider the Kaizen line. The handle and the bolster were beefed up to provide more feedback with a firm pinch grip. The 49-layers of steel are hand finished to an extremely sharp edge that holds. It has a double Damascus pattern that is stunning. This is the ultimate sashimi or carpaccio blade. One steady cut, one beautiful slice. Or put it next to your turkey at Thanksgiving, your ham at Christmas or your roast beef this Sunday.

A great slicing Japanese knife

This is a really great Japanese slicing knife. The Kaizen II has a beautiful blade and the Micarta wood handle feels really smooth in hand, and has a nice roundedness to it. With the blade having 48 layers of steel, you can really feel how much of a difference that makes when slicing fish, meat or produce. A great knife to have in the kitchen.

Slice through the holidays

Beautiful gift for our father who proudly carves the Thanksgiving turkey every year. Definately a splurge. Works well on ham and roast beef as well. Beautiful to look at and use.

One great slicer!

This 9.5" Kaizen II slicing knife great for cutting and slicing large meat, it is also ideal for pile of vegetables and fruits. A made in Japan FC61 is a fine carbide stainless steel of 61 Rockwell hardness is outstanding, a scalpel-like sharpness knife. This knife is exceptional in durability, cutting edge retention, and corrosion resistance. This knife is light and comfortable Pakka wood handle, it feels great in my hand.

Perfect Slicing Knife

You cannot get any better than the Kaizen II slicing knife. It has the scalpel-like sharp blade that will give you the thinnest slice you ever thought possible. Now it is made with a new type of steel, FC61, that is incredibly durable and chip resistant. It takes away all of the fear of damaging your true Japanese knife. It is incredibly beautiful with the layered Damascus blade. And the traditional Japanese handle fits perfectly in the palm of your hand, has the look and feel of wood, but the durability of a synthetic material. Easy to see why Miyabi knives are made and sold in Japan as premium knives too.

Super Slicer...

Hand-honed, forged super steel (61 on hardness scale) wrapped nearly 50 additional times for stability and unique Damascus pattern. Real pakkawood grip is easy to hold and durable.
