Each elegant MIYABI Koh knife is crafted in Seki, Japan. There, MIYABI artisans merge rich Japanese tradition with expert German engineering and state-of-the-art steels to produce these ultimate kitchen knives. Advanced FC61 fine carbide stainless steel - 61 hardness on the Rockwell scale - provides unsurpassed corrosion and chip resistance. This cutting-edge steel ensures the hand-honed blades retain their impressive sharpness for a long time. Thanks to an innovative, ice-hardened process, the FRIODURx2 blades offer remarkable durability, sharpness, and cutting performance. The stunning blades are finished with a true katana edge, homage to the samurai swords made in Seki centuries ago, and feature an embossed MIYABI logo. Stylishly stamped with a silver mosaic pin, the exquisite octagon-shaped handle feels as good as it looks. The Pakkawood handle supports both Western chopping and Asian rocking cuts - experience ergonomic perfection with each slice.

Great lightweight paring knife

This is a great traditional Japanese parer. Super lightweight, it has a nice balance to the knife, and won’t get heavy in your hand if you are peeling fruits or veggies for an extended period of time. The thin yet sharp and durable blade of this parer does a nice job of peeling easily and smoothly. If you’re looking for a traditional style Japanese knife, this is the knife for you.

Paring Perfection

The perfect parer needs to be comfortable, light and extremely sharp. Koh is exactly that with its scalpel-like blade sharpness and perfectly designed wood handle. The blade is made of FC61 steel which is very durable and chip resistant; essential to maintain the thin blade and small edge angle.

Zwilling employee

The Koh line is a forgiving entry into Japanese Cutlery. Similar to a few other Miyabi lines, it works for both the right and left handed chef. The slightly softer steel makes this knife edge easier to maintain and is less susceptible to damage to the cutting edge.
