Each elegant MIYABI Koh knife is crafted in Seki, Japan. There, MIYABI artisans merge rich Japanese tradition with expert German engineering and state-of-the-art steels to produce these ultimate kitchen knives. Advanced FC61 fine carbide stainless steel - 61 hardness on the Rockwell scale - provides unsurpassed corrosion and chip resistance. This cutting-edge steel ensures the hand-honed blades retain their impressive sharpness for a long time. Thanks to an innovative, ice-hardened process, the FRIODURx2 blades offer remarkable durability, sharpness, and cutting performance. The stunning blades are finished with a true katana edge, homage to the samurai swords made in Seki centuries ago, and feature an embossed MIYABI logo. Stylishly stamped with a silver mosaic pin, the exquisite octagon-shaped handle feels as good as it looks. The Pakkawood handle supports both Western chopping and Asian rocking cuts - experience ergonomic perfection with each slice.

Nice and lightweight Japanese Santoku

This is a great traditional style Japanese santoku. Super lightweight, it has a nice balance to the knife, and won’t get heavy in your hand if you are slicing or chopping fish, meat, fruits or veggies for an extended period of time. The thin yet sharp and durable blade of the Koh does a nice job of slicing and cutting easily and smoothly. This is a great blade shape perfect for chopping, and this blade style is a great alternative to a Chef’s knife, which is typically considered your all purpose knife. If you’re looking for a traditional style Japanese knife, the Koh Santoku knife is for you.

It cuts, chops, slice everything!!!

This MIyabi Evolution Santoku, chops quietly for its sharpness and functionality is awesome..!!! This knife is great for cutting, chopping and slicing. Dry Sharpened blade boasts scalpel-like sharpness and comfortably in the hand. It feels the same as the Nakiri and both are must have knife, wide blade helps scoop food from the cutting board. Indentions on the blade helps prevent food from sticking, this creates barrier between the food and the steel. It is made and handcrafted in Japan, fabricated from revolutionary FC61 fine carbide steel, Ice-hardened FRIODURx2 blade offers exceptional durability, cutting edge retention, and corrosion resistance. Hand washing is recommended.

Mince, Dice & Slice

Koh sports a surprisingly comfortable octagon shaped handle, with an elongated bolster for transition from handle to blade. Acute edge angle and light weight, this santoku provides effortless precision mincing, dicing, and slicing.

Ultimate Onion Knife...and so much more

This santoku is the ultimate onion cutting knife! It has a thin blade that is so incredibly sharp that it slices through anything with ease. It's my favorite for onions because their outer surface can be slick, but this knife cuts straight through without slipping. Onions also require several different cuts, both rocking and chopping, and when done correctly, no tears and perfect, uniform pieces. Of course I use it for more than onions! It's great on any fruit or vegetables. The wooden handle is very comfortable, light and perfectly balanced. It's made from a new, durable steel, FC61, which is incredibly chip resistant. A key feature I'm starting to look for when buying Japanese knives.

Special in its simplicity

I really love my Miyabi Koh knives because they hit the mark on what makes a Japanese knife amazing to use. A razor sharp FC61 steel core with a hand honed katana edge. An impressive 9.5 to 12 degree angle insures you can make the thinnest and most delicate slices. The blade is mirror polished with a sandblasted edge for flair. The traditional D shaped handle is comfortable for both left or right hand use.

Zwilling employee

If you are looking for an entry level Japanese knife this is a good one to try. The Miyabi Koh, has a traditional Japanese looking handle that will actually fit comfortably in the right or left hand. Unlike a true D shaped handle, it will not roll for lefties. The blade profile is Japanese but the steel is more German in temperament. It is forgiving, will not chip or nick, but can be honed back to sharpness with ease.

sharp blade

I am very happy with this knife. The handle is uniquely shaped and very comfortable to hold. Overall it is surprisingly light. The blade is made of very durable steel that goes through a double hardening process making a blade that is durable and sharp. It is also very easy to maintain its sharpness. The blade has a thin profile giving nice thin and accurate cuts. There is a lot of thought and design that went into this knife right down to the traditional Katana style watermarking above the blade edge.
