Chef Folse's seventh cookbook is the authoritative collection on Louisiana's culture and cuisine. The book features more than 850 full-color pages, dynamic historical Louisiana photographs and more than 700 recipes. You will not only find step-by-step directions to preparing everything from a roux to a cochon de lait, but you will also learn about the history behind these recipes. Cajun and Creole cuisine was influenced by seven nations that settled Louisiana, from the Native Americans to the Italian immigrants of the 1800s. Learn about the significant contributions each culture made-okra seeds carried here by African slaves, classic French recipes recalled by the Creoles, the sausage-making skills of the Germans-and more. Relive the adventure and romance that shaped Louisiana and recreate the recipes enjoyed in Cajun cabins, plantation kitchens and New Orleans restaurants. Chef Folse has hand picked the recipes for each chapter to ensure the very best of seafood, game, meat, poultry, vegetables, salads, appetizers, drinks and desserts are represented. From the traditional to the truly unique, you will develop a new understanding and love of Cajun and Creole cuisine. The Encyclopedia would make a perfect gift or simply a treasured addition to your own cookbook library.

Terrible shipping!

I have no complaints about the book itself—the content is great! However, my issue lies with the packing. The book is quite large, about the size of a university textbook, and it was shipped in a box that was far too big, with just a few air pillows for cushioning. As a result, the book clearly bounced around during transit. The box arrived with large holes and one side completely detached as I cut the single piece of tape holding it together. Unfortunately, the book itself had smashed corners, making it unsuitable for the gift I had intended it for.

Very Disappointed

First book I received was damaged, all four corners were bent, the last 10 or more pages were badly wrinkled and the binding was torn. I called they sent a replacement with no problem and told me to keep the damaged one. The 2nd one came in damaged worse than the 1st one. The front binding was compressed/crinkled the binding was torn 2/3 inches. I ended up returning both books and ordered on directly from Barnes and Nobles and it was delivered in excellent condition. VERY DISAPPOINTED in the purchase from Macy’s.

Great book - lousy shipping.

Book is great, but the shipping was terrible. The book was just thrown into a flimsy box with virtually no protective wrapping, padding or packaging. The box was clumsily sealed with tape and had partially come apart by the time it was delivered. Amazingly, the book arrived in tact but the dust cover was destroyed. Ordinarily, I would send it back, but I have no confidence that a replacement would be handled with any more care. Based upon this experience, I will not be placing any more on-line oders with Barnes & Noble in the future.
